This is everyone's favorite beer around Christmas time. The malt is quite complex and the hops blend in a heavenly way with the spices to create an amazing aroma.

  5. Sugar - Honey 1lb 0oz (6.5 %) End Of Boil, Irish Moss 0.01 oz used In Boil

Steps
  1. Mash/Grains: Mash: Single Step Infusion (67C/152F)
  2. Boil: Bring wort to boil add 1oz Centennial hops (60 mins)
  3. Boil: At 30 mins add .5oz Centennial hops
  4. Boil: At 5 mins add .5oz Centennial hops
  5. Boil: At flameout add 1lb Honey
  6. Fermentation: Fermentation at 58F for 21 days.
  7. Bottling: On bottling day, make a tea with a quart of the beer the spices and the priming sugar. Boil for one minute. Add to a french press and let sit for 15 minutes. Add to bottling bucket and then add beer to mix it in and bottle.
