Captain Hooked on Bitters (Red Hook Clone)

Tasting Notes:

Light copper, crystal clear body with a medium, rocky, off-white head. The nose is slightly malty with pronounced, though not overwhelming, hoppiness. Hops remains dominant in the flavor but there is a good amount of balancing malt.

  2. 5.00 lb Toasted Malt (27.0 SRM) (2-row toasted at 350 degrees for 12-15 minutes)
  3. 2.00 lb Caramel/Crystal Malt - 60L (60.0 SRM)
  4. 1.00 lb Cara-Pils/Dextrine (2.0 SRM)
Hops
  1. 1.00 oz Williamette [5.50%] (60 min) Hops 9.7 IBU
  2. 1.00 oz Tettnang [6.50%] (30 min) Hops 8.8 IBU
  3. 1.00 oz Williamette [4.60%] (20 min) Hops 4.9 IBU
  4. 1.00 oz Tettnang [6.50%] (5 min) Hops 2.3 IBU
Yeast
  1. British Ale - Wyeast Labs #1098

Steps
  1. Mash/Grains: Single infusion mash at 157F.
  2. Boil: Boil for 75 minutes following the hops schedule. It may be necesary to reduce to a lower rolling boil to prevent excess boil off.
  3. Boil: At 60 minutes, add 1.0 oz. Williamette hops.
  4. Boil: At 30 minutes, add 1.0 oz. Tettnang hops.
  5. Boil: At 20 minutes, add 1.0 oz. Williamette hops.
  6. Boil: At 5 minutes, add 1.0 oz. Tettnang hops.
  7. Fermentation: Primary fermentation: 7 days at 67F
  8. Fermentation: Secondary fermentation: 10 days at 67F
  9. Fermentation: Crash cold condition for 2 weeks if possible
