  2. 1.00 lb Cara-Pils/Dextrine (2.0 SRM) Grain 4.94 %
  3. 1.00 lb Munich Malt (9.0 SRM) Grain 4.94 %
  4. 0.25 lb Melanoiden Malt (20.0 SRM) Grain 1.23 %
Hops
  1. 2.50 oz Hallertauer [3.80 %] (60 min) Hops 16.0 IBU
Yeast
  1. WLP 838
Specialty
  1. Gelatin in secondary
  2. 2 items Whirlfloc Tablet (Boil 15.0 min) Misc
  3. Calcium Chloride (Mash 60.0 min) Misc
  4. Gypsum (Calcium Sulfate) (Mash 60.0 min) Misc

Steps
  1. Mash/Grains: Mashed at 154F for 90 minutes (I used a Sawdustguy RIMS system)
  2. Mash/Grains: 8 gallons of strike water and two 4 gallon sparges of 168F water
  3. Boil: Bring the wort to a boil and add 2.50 oz Hallertauer Hops
  4. Boil: Keep the wort boiling for 60 minutes and watch for a boil over. Terminate the boil after 60 mins and chill.
  5. Preparation: Make sure that the yeast is ready to rock so it has no problem taking off at 52F.
  6. Fermentation: Pitch yeast and start primary fermentation for 21 days at 52F
  7. Fermentation: Allow 7 days at 65F for diacetal rest
  8. Fermentation: Secondary fermentation for another 21 days at 39F
