Brewing Notes:
I came home 24 hours after pitching the yeast and the presure had blown the top off the carboy and it was foaming all over. I was careful to clean it up after I had replaced it with a new (sanitized) airlock. It made a mess but smelled terrific! (Not sure my wife would agree.) I'm not sure if its normal for IIPA's to be that active.

I used some old hops in this beer and I think you could taste it. A slight cardboard taste.

Bottoms-Up Imperial IPA
Tasting Notes:
Light in color, rich in maltiness and the maddening amount of hops was incredible. My intent is to build a recipe that was motivated by Pliny. That recipe boasts over a pound of hops for a 5-gallon batch. I’m stopping at 12 ounces (I know…I’m a wuss). I’m also going to scale this up to 6.5 gallons to allow for loss due to the incredible amount of sludge I’m going to end up with.
Ingredients
- 1.00 lb Cara-Pils/Dextrine (2.0 SRM
- 1.00 lb Caramel/Crystal Malt - 10L (10.0 SRM)
- 0.25 lb Honey Malt (25.0 SRM)
- 18.00 lb Pale Malt, Maris Otter (3.0 SRM)
- 1.25 oz Centennial [9.50%] (Dry Hop 14 days)
- 1.00 oz Centennial [9.50%] (10 min)
- 1.00 oz Amarillo Gold [8.90%] (10 min)
- 1.00 oz Crystal [3.50%] (10 min)
- 1.00 oz Summit [16.50%] (Dry Hop 14 days)
- 1.25 oz Amarillo Gold [8.90%] (Dry Hop 14 days)
- 1.25 oz Cascade [6.10%] (Dry Hop 14 days)
- 1.00 oz Nugget [11.50%] (45 min)
- 1.00 oz Centennial [9.50%] (30 min)
- 1.25 oz Cascade [6.10%] (15 min)
- 1.00 oz Columbus (Tomahawk) [12.20%] (First Wort Hop)
- 1.00 lb Corn Sugar (Dextrose) (0.0 SRM)
Steps
- Mash/Grains: Mash at 153F for 90 minutes
- Other: Add Columbus(Tomahawk) hops to kettle before you transfer the mash to the kettle. (This is FWH aka First Wort Hopping)
- Fermentation: Pitch yeast into fermentor
- Boil: Bring Wort to a boil
- Boil: At 45 minutes add 1oz Nugget hops
- Boil: At 30 mins add 1oz Centennial
- Boil: At 15 mins add 1oz Cascade
- Boil: At 10 mins add 1oz Centennial, 1.00 oz Amarillo Gold, and 1.25 oz Cascade
- Boil: At flame out add 1lb Corn Sugar
- Fermentation: After 14 days of fermentation, add the following hops (dry hop): 1.00 oz Summit, 1.25 oz Amarillo Gold, 1.25 oz Cascade, 1.25 oz Centennial
