Uncle Crunkel's Munich Dunkel

Ingredients
Malt
  1. .25 Lbs chocolate malt 350L
  2. 7.5 LBS Munich
  3. 3.5 Lbs Pilsner
  4. .25 Lbs Crystal 120 (+ tossed in some vienna)
Hops
  1. 1.00 Oz Tettnanger @60
  2. .5 Oz Tettnanger @30
  3. .5 Oz Tettnanger@ 10
Yeast
  1. WLP838 Southern German Lager

Steps
  1. Mash/Grains: Mashed in a MLT cooler at 153F for 60-70 minutes.
  2. Mash/Grains: Batch sparged hot and hit 168F in the grain bed.
  3. Boil: Bring wort to a boil and set your timer for 75 minutes.
  4. Boil: At 60 minutes, add 1.0 oz. of Tettnanger hops.
  5. Boil: At 30 minutes, add 0.5 oz. of Tettnanger hops.
  6. Boil: At 10 minutes, add 0.5 oz. of Tettnanger hops.
  7. Preparation: For my starter i used WLP838 Southern Lager yeast with a half gal of Starting wort (sg: 1.045). Once this started fermenting I dropped the temperature down so it would be starting at the same temp as the lager. Pitched cold.
  8. Fermentation: Start your primary fermentation at 10 days @ 55F.
  9. Fermentation: For your secondary/lager, bring the temp. down to 34F and let this sit for 6 weeks.

Recipe Notes

75 minute boil just to drive off DMS from pilsner (and possibly get a little extra color)...I didint feel like 90 minutes was nessesary here.
