Tasting Notes:

This beer has a complex malty flavor profile containing prune, tofee and nutty notes with a hint of roast in the background. Due to its high gravity, a subtle alcohol flavor comes through. A full-bodied, smooth beer that benefits from cellar aging.

Ingredients
Malt
  1. 8 oz. Chocolate
  2. 8 oz. Caramel 80L
  3. 8 oz. Caramel 120L
  4. 12 oz. Crushed Munich 10L
  5. 6.6 lb. Porter LME
  6. 2 lb. Amber DME
Hops
  1. 1.5 oz. Bittering
  2. .75 oz. Flavoring
Yeast
  1. 1 satchet
Specialty
  1. 2 vanilla beans

Steps
  1. Preparation: Clean all equipment thoroughly.
  2. Mash/Grains: Steep your grains at 150F - 165F for 20 minutes.
  3. Boil: Bring your wort to a boil and set your timer for 60 minutes.
  4. Boil: Add bittering hops
  5. Boil: Boil for 45 minutes
  6. Boil: Add flavoring hops
  7. Boil: Boil final 15 minutes
  8. Boil: Terminate boil
  9. Fermentation: 4-6 days @ 64-72F
  10. Fermentation: 7 days @ 64-72F
  11. Bottling: Add vanilla bean extract at bottling

Recipe Notes

After racking to your secondary fermenter AND your beer has reached terminal i nal gravity, place your beer in a cool environment (45 - 55F). You can use variable temperature refrigeration or colder seasonal months to properly cold-condition your beer
