Ingredients
Malt
  1. 2.00 lbs crystal malt 40L
  2. 6.6 lbs wheat LME
Hops
  1. 2.00 oz cascade hops
  2. 1.75 oz US magnum hops
Yeast
  1. 3942 Belgian wheat wyeast
Specialty
  1. 2 lbs honey
  2. 1 tsp allspice lightly crushed
  3. 2 cinnamon sticks
  4. 1 nutmeg lightly crushed
  5. irish moss
  6. 2 ounces (4 tbl) fresh grated ginger
  7. peels fom 3 lemons
  8. 10 cloves lightly crushed

Steps
  1. Mash/Grains: steep 20 mins at 150-165
  2. Boil: Add 1 3.3 lb can of LME
  3. Boil: Add 1.66 oz of US mangum hops
  4. Boil: After 40 mins, add 1 3.3lb can of LME
  5. Boil: After 45 mins add Irish moss
  6. Boil: Start adding honey after 49 minutes and add remaining spices and specialty at 50 mins
  7. Boil: After 58 minutes add 2.0oz of Cascade hops
  8. Fermentation: Primary for 7 days
  9. Fermentation: Secondary for 7 days
  10. Bottling: Add priming sugar and let sit for 14 days (but realistically start drinking after 7)
