1914 Courage Imperial Stout

Tasting Notes:

Dark blackish brown and syrupy. Madeira, rum raisins, port, black cherries, hints of treacle and coca. Pipe tobacco and a walnut tannic drying character. A deep and rich drying finish that lingers for ages. Words do not do this beer justice....

Ingredients
Malt
  1. 13.53 lb. English pale malt
  2. 3.35 lb. Brown Malt
  3. 1.75 lb. Black malt
Hops
  1. 2.58 oz. Fuggle 5.5% 120min (45 IBU)
  2. 2.43 oz. Hallertauer Mittelfruh 3.5% 30 min (19 IBU)
  3. 2.26 oz. Fuggle 5.5% dry hop
Yeast
  1. Nottingham: 1469 West Yorkshire Ale

Steps
  1. Mash/Grains: Mash for 120 min. @ 153F (0.8 qt. / lb.)
  2. Boil: Bring wort to a boil and set your timer for 120 minutes.
  3. Boil: At 120 minutes, add 2.58 oz. Fuggle hops.
  4. Boil: At 30 minutes, add 2.43 oz. Hallertauer Mittelfruh.
  5. Boil: Terminate the boil and chill the wort to 67F.
  6. Fermentation: Pitch your yeast at 67F and ferment for 1 week.
  7. Fermentation: Rack to the secondary and add 2.26 oz. of Fuggle hops. Wait another 2 weeks.
